
Early on with Lost Recipes Found, we published the how-to for Frank Sinatra’s Spaghetti with Italian Tomato Sauce. Since then, we came across Frank’s recipe for spicy Italian sausage with sweet peppers. Make a meal with both dishes! You’ll want to serve ’em together.
Makes 3 to 5 servings
Ingredients
- 1 lb spicy Italian sausages
- 3 (we do 5) green bell peppers
- ¾ cup red wine
- 3 Tbsp olive oil
- salt and pepper to taste
Instructions
- Remove stems and seeds from peppers; cut into 1 ½-inch chunks. In an ovenable skillet, saute peppers in oil until they begin to soften. Sprinkle with salt. Remove peppers to a platter. Now, brown sausages in pan. When browned, add red wine. Cover the pan with oven-proof lid, or foil, and bake sausages in wine at 350 degrees for 30 minutes. Uncover; add sauteed green peppers and mix in. Bake another 30 minutes, uncovered.
Similar to a family recipe. Our variance is sauteed onions (2 to 3) in addition to the peppers. Serve on French or Italian bread cut to length of sausages.
